Food, Wine &       Spirits.

My wife Moyra and I both enjoy cooking and we keep our pantry and freezer well stocked.

We follow a diet plan which is a cross between the Mediterranian Diet, the Atkins diet, the low gycemic diet and the Paleo diet. Basically, Primal with grass fed  dairy. That being said, we often like to prepare low-carb versions of spicy ethnic dishes - French, Italian, Indian, Argentine and Eastern European. For special occasions, I make Polish cabbage rolls, pierogi, potato pancakes and borsch from my old family recipies. Living in Texas, we are able to grill outdoors all year round, and we often barbeque steaks, fish, shish-kabobs, and baby back ribs. We often enjoy fine cheeses, and I am particularly fond of "Roaring 40's" Austrailian bleu cheese. Sugar and wheat laden deserts may be gone, but smoked salmon and pate are always yummy!

We use plenty of exotic spices in our dishes, and usually enjoy a nice glass or two of heart healthy red wine with our dinner meal. We enjoy a variety of Californian, Austrailian, French and Italian red and white wines and are particularly fond of Stag's Leap Cabernet. We also often enjoy Veuve Cliquot champagne on special occasions. Lately we have discovered a very inexpensive line of wines from a new California winery called "Cul de Sac" and are delighted with their quality and obscenely low prices. Well, soon they will be rated and their prices will skyrocket - but until then, enjoy!

I occassionally enjoy an ice cold glass of beer with a spicy meal, and have a few favorites. Low carb if possible. American favorites include Henry Winehard's Private Reserve, Sam Adams, Anchor Steam, and Shiner Bock. I like Corona and Modello Negro from Mexico. German favorites include Becks, Warsteiner and Bitburger. I also like creamy Irish Guiness. I LOVE Jamaican RED STRIPE, French Kronenburg, and Japanese Asahi and Saporro. Canadian favorites are Molson's Candian, Labatt's Blue, and Laurentide beer from Quebec.

For spirits, I enjoy Glenlivet single malt Scotch whisky, Crown Royal Canadian Rye Whisky, Patron  White Tequila, Southern Comfort, Kraken Spiced Rum, Flor de Cana Rum, Belvedere Vodka, Feckin Irish Whisky, Drambuie, and B&B. I enjoy some mixed drinks including Caiperanias, Mojitos, Margharitas, Gin and Tonic, Pims Cups, and Belvedere Martinis - straight up with a twist. Low sugar mixers when possible to keep the carbs down.

Everything in moderation, of course.

"Cent'anno!"
